Every time you heat oil past its smoke point, the molecules fracture and then re-bond to each other, cross-linking into a hard, water-repelling film that grips the metal. And why scrubbing harder makes it worse
The instinct is to attack it — steel wool, scouring pads, a green scrubby and twenty minutes of forearm. Here's the problem with that. Steel wool is harder than your pan. So you don't remove the polymer so much as carve through it and into the surface underneath, leaving a field of micro-scratches.

The gap almost nothing sits in

What it will and won't do

Will it scratch my stainless pans?
No. The abrasive is calcium carbonate at Mohs 3; stainless steel is around 5.5. A softer mineral cannot cut a harder one — this is why cleaning patents class Mohs-3 abrasives as non-scratching on steel and aluminium. Go gently on soft anodised aluminium and never use it on damaged non-stick.
Can I use it on non-stick?
